Half of the book is U.S. measurements and the other half is the same in Metric measurements. So, you really only get about 60 pages of (1-3 to a page) different items with rehydration calculations. There is nothing on how long it takes to reconstitute the specific items (some take minutes, others take hours) or whether you get better results with boiling, warm or cold water ... or even a different liquid. Very disappointed in this book ... very limited information for the price.
The book has a great cover, but the inside looks like pages run on a copier. Very cheap looking.There are no instructions on how long to hydrate or what liquids to use. This does make a difference in how the final rehydrated product turns out.Some of the recommendations I've followed so far, are incorrect, either too much or too little liquid. The book is definitely not worth the $17 price tag.My advice is, save the money and just do a Google search on the things you need to hydrate. You can print them off yourself and put them in a binder for less money. Plus, chances are what you find on line gives more accurate information. Sometimes experimentation lends better results.Do like I did after buying this. I made my own notes in a Word file, printed them off, and now have a spiral bound reference book.
I am so glad I bought this book it has from dehydrated to freeze dried and powder products perfect book for any one who uses storage food for long term and for every day use of powders dehydrated or freeze dried foods it is a perfect book to keep around
I like the fact that this book is written in both US and European formats. The one half is in US measurements, the other half is written in metric - so you have the best of both worlds here. Having a freeze dryer, this will be beneficial for rehydrating items that I may not be certain of. This is a very nice book with great information. I'm very happy with my purchase.

Because the amount of dried food in a specific volume depends on its packing factor, this book would be much better if it were based on dry weight. A cup of diced onion is a lot different from a cup of minced onion or a cup of powdered onion.
Its a great book but the measurments for the 2 and 3 whole eggs powdered is wrong. If you translate the metric to US, the US is off. Once I wrote the correct and use it, the eggs turned out great.
